New game to watch: Crowfall

If you haven’t heard yet, there is a new game in the works by a new indie company(ArtCraft) and it’s called Crowfall! They’re in kickstarter right now so go back them. I’ve already pledged $175, of my fairly non-existent student budget, to get the Gold Patron level. :D They say it’s Game of Thrones meets Eve Online. I’ve been watching it for a while, but they recently started throwing out a lot more information. The more I hear, the more excited I am. This could really be the next game I call home for a long time. :) I really love how the devs say, ‘This game isn’t going to be for everyone, we want a small group of passionate gamers.’ That is exactly what I want, not something that will please all the whiners, something that’s different, challenging and fun as hell.

There’s crafting, PvE and of course PvP. Basically the big point of the game is “Eternal Heros, Dying Lands”. Essentially your character and achievements will stay in the Eternal Kingdoms, but the Campaigns, will last for 1,3 or even 6 months at a time. The world will be destructible thanks to voxels. :D It also decays as the seasons change from spring, summer, fall to winter. When winter is over the world dies and the characters go back to the Eternal Kingdoms either VICTORIOUS or licking their wounds. Sounds absolutely badass.

I like the idea of being able to go nuts in the campaign worlds, destroy everything, knowing that it’s not forever and you can go home to your own kingdom. :) The Archetypes aka classes, are very intriguing as well. Not a ton of into yet, but I’m really liking the look of the Druid and the Frostweaver. I’ll let you explore the website and discover that for yourselves.

Also, let me just say, I think the art is breathtaking! Absolutely gorgeous!

Serenity Now

I’m not shy to admit that I’m not a religious person. Spiritual maybe, but not religious. Regardless, I was thinking about the Serenity Prayer today. It has a great message, no matter your faith.

“Grant me the serenity to accept the things I cannot change and the courage to change the things I can.” I can get so hung up on things that I have no control over instead of working on the things that I can. I guess the silver lining is that I do know the difference, or so I think…

I hate feeling helpless, I’m a fix-er or solution-finder. I hate being in a bind, and I’m usually resourceful enough to not have it last for long. I can change and control myself, that’s what it is time to focus on. :)

This trip called Life

Does anyone really know why we’re here or what’s going to happen in the future? I don’t think so. We can have good guesses, premonitions even, but no one really knows for sure.

I believe in being a “go-getter” and making things happen. You can’t get a good job by doing nothing, you can’t be successful if you don’t pour your heart into something. Life is what you make it. Nothing that’s worth it, comes easily, maybe once in a lifetime, if that.

I also believe that things happen for a reason. Sometimes we may not know why for a long time, if ever. I think some things are just meant to be, like fate almost. Now of course that doesn’t mean sitting around and waiting for things to happen. We have to live our lives, get out there and enjoy life. However, certain things tend to happen on their own. I also believe in karma. I think all these things are related. If you’re a good person then good things will eventually happen for you, things will come together. Timing is everything. These past 2 years have been a perfect example for me. I thought I would never recover after my ex and I broke up, I was in a roll over and diagnosed with MS, but I kept going. No matter what I told myself  “as long as I have two legs, I’m going to keep moving forward”. I kept going and now things are coming together, my family life has greatly improved, I’m going to school to do something that I’m passionate about, I have great friends (it took me awhile to weed through the bad ones) and next year I’ll be moving into a beautiful brand new condo.

Life is always going to throw shit at you and if you make it through today, life will try again tomorrow. That’s life. Just know that things are going to work out. Maybe not today, maybe not tomorrow and sometimes not the way you thought. Life is full of ups and downs, but without the downs there would be no ups. Try and enjoy every moment of this crazy trip called life.

Let go of the wheel for a bit and see what happens, just enjoy the ride.


We all have walls. WE build them up to protect ourselves, we let them down when we trust someone, so the story goes. What about when you let them down too soon, or you don’t let them down at all? People are always saying you should let others in or you’ll end up really lonely. I beg to differ. Walls are necessary, walls protect us, shield us and save us from the agony of getting hurt.

How do you know when to put walls us and when to let them down? How do you know who is safe to let in and who isn’t?

Until then, I’ll try and keep building.

Make Ahead, Freezable Breakfast Burritos

I made another great “make ahead” recipe today. This time with breakfast in mind! I am not a morning person what-so-ever, waking up and getting dressed in hard enough. Lots of days I don’t have a lot of time to make anything for breakfast or feel like eating, but if I have some yummy things ready to go, I know I’ll have a good start to the day!

Who doesn’t love breakfast!? It’s my most favourite meal. Here’s how you can make your own breakfast burritos to freeze and have on-hand for a quick breakfast!

What you will need:

12 large eggs

1/3 cup of milk

1 package of breakfast sausage

1 green pepper

1 yellow onion

1 can of black beans

1-2 cups shredded cheese (depending on how much you like, I used the pre-shredded kind)

10-12 large tortillas (Whatever kind you like, I used the flour and corn blend this time)

Italian seasoning

Salt & pepper

First you’ll want to take all the breakfast sausage out of the casings and cook while breaking up into pieces. Set aside, let drain and cool.

Finely chop onion and green pepper. Break 12 eggs into a bowl and whisk together with milk. Start sauteing onions and green pepper with a small amount of butter or olive oil, then add eggs and scramble cook until just done, adding a sprinkle of talian seasoning and S&P to taste. Set aside and let cool.

When everything is cool and ready to assemble, put a few tortillas on a plate and cover with a damp paper towel. Microwave for about 10-20 seconds until warm, they’ll be easier to work with and less likely to break this way.

Start by putting some eggs in the middle.

Then add a bit of the sausage, black beans and cheese. I folded the burritos like this: How to fold a burrito.

Lay the burritos seam side down on a tray and put in freezer for about 30-60 mins. Only they’ve froze you can wrap them each in plastic wrap and put in a ziploc bag to store in the freezer.

When you want to eat one simply take out of the package and microwave for 30-90 seconds depending on your microwave. You can even take it out of the freezer and leave in the fridge overnight and cook in the morning.


Sweet and Sour Meatballs – Make Ahead Freezer Meal

This recipe was one of my favourites growing up and still is to this day. Now that I’m in school I have less time to prepare lunches all the time. We also only have 30 minutes for lunch. I love making meals ahead of time and freezing individual portions. They are so easy to just take out of the freezer the night before or day of and ready to warm up at school for a yummy lunch!

Here is how you make my delicious sweet and sour meatballs. I like to serve them with rice and/or quinoa. I tripled this recipe so I could feed  hungry 5 people and also make lunches for myself.

You will need for the meatballs:

1 pound extra lean ground beef

1/2 cup dry bread crumbs (I also use soda cracker crumbs or even panko)

1 1/2 tablespoons ground flax-seed (optional but it adds fiber and omega-3)

1/4 cup milk

2 tablespoons onion, finely chopped

1/2 Worcestershire sauce

1 egg

You will need for the sauce:

1/2 cup packed brown sugar

1 tablespoon cornstarch

1 can of pineapple chunks (with juice)

1/3 vinegar

1 1/5 tablespoons soy sauce (or soya)

First thing you’ll want to do is get a large bowl to mix up the meatball ingredients.

Add the dry ingredients.

Add the wet ingredients!

This is the fun part! Now mix that all up with your hands until well incorporated.

Now once that is all mixed you want to preheat your oven to 375°F and cover your cookie sheet in foil, give it a little spritz with non-stick spray as well. (This will help with clean-up later on).

Begin rolling into little balls! I do mine about golf ball sized or so.

Rolling,rolling, rolling… You’ll begin to have something like this: (Keep in mind I made a triple batch so I have a ton of meatballs haha)

Now pop those suckers into the oven and cook them for about 25-30 minutes. I will cut one of the middle ones in half to make sure they’re done. While those are cooking you can get started on the sauce! =D

Into a saucepan or deep non-stick frying pan add all the ingredients.

Sneak a couple of pieces of pineapple. :D

Cook it over mid-high to get it cooking then reduce a bit to it doesn’t bubble over or burn. You want to stir this frequently. When you first start it cooking it will be cloudy and watery in consistency. You will know it’s ready when it’s starts to thicken and become glossy and more caramel-y looking see the next two photos:

Now once the meatballs and sauce are done I like to add them to a slow cooker or large oven safe dish. (oven at 200) And let them sit together for about 30 mins. Mmmm smelling and looking so good.

At this time I will cook my rice and quinoa. Almost time to eat! :D

If you’re going to be making individual lunches out of these, get your containers ready.

Once the rice and/or quinoa is done it’s time to eat! YUMMY! I also like to add some chia seeds on top for some extra good-for-you stuff. ^^

I like to put a bit of rice in my dish and a bit of quinoa as well, about 50/50.

Now add some meatballs and sauce on top…

It only shows 5 in the photo but I got a whole other meal out of it after everyone had dished up. So not only did I make dinner for my family and myself, 5 people. I also now have 6 yummy lunches in the freezer ready to take to school or work!

The beginning of a new chapter, hello 2015

Finally 2015 is here! I start school for paralegal tomorrow and I can’t wait. Truth be told I’m a little nervous, but I am ready to get started with the next chapter of my life. I want to learn a ton of stuff, polish the skills I already have and of course, meet new people! Tomorrow is only registration, 8:45am until noon, so that will ease me in I think. Also: no school on Fridays! Yay a day to cook, go running and of course: homework!

I’m trying to make sure I have everything ready that I need and also trying to make a list of some groceries I need to pick up tomorrow. As well as some new teas. I have a feeling I’ll be drinking a lot of tea while slaving over homework.

Oh I almost forgot! My Surface Pro 3 finally came! I got a sweet deal on a holiday bundle, the i5 256 GB Surface, a purple typepad cover, a nice case and MS Office 365.

I signed up for a free month of Netflix. I was worried that it wouldn’t work with our crappy internet but IT DOES! <3 I adore Netflix, I’ve gone through so many House of Cards, Suits, Orange is the New Black and The Guild episodes! I wish there was Game of Thrones and Sex and the City though… There’s another service called CraveTV only $4 a month so I might try that one as well. :)

PS. My mom was trolling the shit out of me this this terrifying decoration on your tree. It’s an antique but still creepy as hell! :P
